#49 – Bing Cherry
Bottled (8) 750ml and (25) 375ml (from 5 gallons) at 15% ABV on 12 December 2015.
These bing cherries were from late in the 2014 season, same story as #48 Rainier Cherry. Both batches were also the first to go through the new bladder press I bought this year to save my hands the trouble of squeezing them all by hand! 🙂
It looks a bit like a darker rosé, with a polished clarity to it, thanks to running it through the new filter a few times. The nose is light and subtle, but still has hints of cherry and perhaps a bit of rose flower. The flavor is certainly more delicate than #11 Cherry and #25 Bing Cherry — much more reasonable on the alcohol, and certainly not anything like a port — and has a nice gentle tartness to it.
