#18 – B.R.B. (Black-/Rasp-/Blue-berry)

Bottled (24) 325ml and (12) 750ml (from 5 gallons) at 18% ABV on 31 March 2012.

This co-fermented wine was a very nice surprise on several fronts.

After allowing to ferment dry, I sweetened back to taste and waited about a week before bottling.  Although there was no indication of life during bottling, there was still some yeast still alive, and nearly every bottle I’ve opened so far has been frizzante!  As the bottles and corks I used were not made for sparkling wines, I’m very fortunate that it fermented in the bottle just enough for a light “pop” when opening and some very light bubbles in the glass — instead of blowing out the cork or breaking the bottle!

Other nice surprises include the deep, clear, rich purple color, the nice berry nose, and a wonderful flavor — although it’s possible to discern between the blackberry, raspberry, and blueberry elements, they all work together quite well!

Revisited the 2013 reserve bottle on 4 March 2014…  Cork still goes POP, flavors and aroma are still all there, and the bubbles are still having fun on the tongue!  🙂
