#25 – Bing Cherry
Bottled (26) 325ml and (6) 750ml (from 5 gallons) at 23% ABV on 8 October 2012.
Through a coworker’s charity, I purchased a whole bunch of Bing and Rainier cherries at a very good price (compared to grocery store prices and what I paid for the cherries that went into #11 Cherry…) The result is a rich, port-like, and flavorful wine with just enough residual sweetness. I think it’s a more refined wine than the #11, even at the high ABV.
This wine stands up well to a steak, and also pairs well with various cheeses.
